No Bake Granola Bars


One of my first blog posts were about granola bars.  Holy cow, it’s been almost 2 years.   Almost 2 years that I completely fell in love with making granola bars, and it was time I tried a different recipe.  Preferably a recipe that quick & no bake. This one comes together in no time & is so easy peasy!  The chocolate drizzle is optional but highly recommended.  Can you ever say no to chocolate?  The answer is no!

It’s crazy to look back how much progress I’ve made with photography.  I think I have, anyway!  It’s encouraging, but I still have a longggg way to go!  I am hoping to attend some food photography workshops next year and so I am eagerly anticipating that.  Come on next year! 
No Bake Granola Bars 
Makes 12 granola bars (from an 8X8 inch pan)

INGREDIENTS

2 cups large flake oats
15 medium-sized soft Medjool dates, pitted
1/2 cup peanut butter
1/4 cup maple syrup
1 1/2 teaspoons vanilla extract
½ teaspoon cinnamon (optional)
1 cup Rice Krispies
1/2 cup semi-sweet chocolate chips, melted

DIRECTIONS
Line an 8X8 inch pan with aluminum foil & set aside.

In a food processor, add the oats, dates, peanut butter, maple syrup, vanilla & cinnamon. Process until the mixture comes together. It should be dense and form a ball in the processor & hold it’s shape when rolled into a ball. If it’s too crumbly or dry, then add more maple syrup. If it’s too moist, then stir in some oats. Next, add 1 cup of the Rice Krispies, crushing them into the mixture and mix until well combined.

Transfer the mixture into a pan and firmly press into an even flat layer.

In a stainless steel bowl over a pot of simmering water, melt the chocolate until smooth. Transfer to a plastic bag with the end trimmed off & drizzle over the pan. Place in the refrigerator & allow to set, about 2 hours. Slice & store in an airtight container in the refrigerator for up to 1 week.
